Files are backed up in the same directory as the RVT file exists in. They will get automatically created witht eh following naming convention. <filename>.000X.rvt. The ".000x" will be a number that is sequenced as the file is saved. by default Revit will save 3 old versions and then delet the oldest and add to the sequence. So you will always have 3 versions back of your file.
If you are working with a file that has worksharing enabled the system is a bit different. In this case the backup will be a folder named "backup" in the same location the central file exists. To restore the central file to a previous position you must open it up and then do a rool back function. Revit will use the files contained in the "backup" folder to restore the file to the point you specify.
