Is it possible to edit a room element? Where is it in the family tree?

You can edit the properties of a room in a schedule, or in the Properties window. It's not in the Project Browser, because it is not a family.

Thanks Alfredo! Let's say I add a parameter to the room while creating a schedule. How would I create a tag that can report that parameter?

It must be a shared parameter. Edit or create a new Room tag family and add a label that also referenced the same shared parameter.
