The detail level does not affect how objects appear? 

Stair landings are added automatically?

when can you select the height of the ceiling?

These seem to be three separate questions. Would you please make a separate post for each question, and in each post elaborate the difficulty you are facing? Your current descriptions make it difficult for me to understand the specifics of the issues you are facing.

these seem more like statements than questions, but.....

detail level:

• depends on the object. if you have a structured wall, when you set the view to coarse, it should only show as 2 lines, when you set to Med or Fine, you should see all the layers of the wall. if you place a family, it may or may not have elements in it that are effected by the detail level depending on how it was made. 

Stair Landings:

• if you place the landing as part of the run, Yes it placed automatically. a landing can also be placed after the stairs are placed if needed.

Ceiling Height:

• the ceiling height can be set at any time from the properties window. if you placed it at the incorrect height initially, select it and change the height from the properties.
