I did some more digging and found that Mental Ray only renders to an image sequence - you can create a video file from this image sequence with the packaged FCheck program, or use one of the numerous 3rd party video apps out there.
Also, rendering directly to video has many downsides, such as:
-If for some reason the render freezes, or software crashes - you have to restart your entire render from frame 1. With image sequence rendering, you just continue rendering the frames you need.
-Slower rendering speed, since you are adding the burden of video encoding while rendering - both of which are highly cpu intensive processes
-Selecting the 'right' encoding settings for your render is a bit of trial-and-error, and a balancing act between file size and video quality - and since you can't actually see your video till it's done, you could end up re-rendering multiple times.
By chance, could you please post a video of the issue happening on your machine so I can see if there's anything noticeably different on your set up then mine?
