I have actually made a tool for this. I browse for the new part (doesn't matter if its iam, ipt or ipn) and then create a new sheet with the replaced reference file. I use it for when I have variations of parts / assemblies and I want an identical drawing sheet layout but with the new referenced part
Hi @Anonymous and others. This has actually been requested before. Please consider voting on the original as well to help get this suggestion recognized: Replace Model Reference .ipt to .iam.
Please! We plan to use the assy drawing as a machining drawing and an assembly drawing. The only difference is 2 small threaded inserts. This was a last minute change to include the inserts so I need to point the .idw to the .iam model instead of the .ipt model.
replacing ipt with iam, not too sure, but I'm sure someone out there has found a way.

8 years later and Inventor STILL doesn't allow this functionality. Which means I get to re-make an entire drawing from scratch for adding a threaded insert to a molded part, changing it from a part file to an assembly file. Crazy.
