I have autocad Architecture 2021 and there are no rock wall palletes to add for landscaping or fireplaces or old homes with stone foundations.  I do a lot of work on renovations of 19th/early 20th century homes and 18" thick concrete basement walls look stupid.

Got it! Here's the short answer without any links:

To get the full tool palette (not just the sample version) in AutoCAD Architecture 2021:

Press Ctrl + 3 to open Tool Palettes.

Type OPTIONS, go to Profiles, and set to Default to restore all tools.

Use DesignCenter (Ctrl + 2) to drag and drop full content into your palettes.

Open Content Browser to load or import full tool catalogs.

Make sure you're not in a limited workspace—switch to Architecture workspace.

You can take a standard wall style and create a new style. Then apply a rock material to the wall. Open the MATERIALS palette and select one in the STONE category. You may need to create your own material.
