Currently, our heatmapping feature only displays the last reading received from an IoT device. Other users, like yourself, have submitted feedback describing how they would like to see historical heatmaps with a date and time picker. This is something that is being worked on with no ETA at the moment, but it's great to see how much value this feature will bring. You can check out our published roadmap and submit feedback to the product team here.
Focusing on the question of what temperature the color is representing-there is a legend that appears when the Connections panel is open as picture below. The legend defines what color represents what temperature. With the spreadsheet view open, there is a "Last Reading" column, so you know when the data was last received.
Opening the charts view, hovering the cursor over the graph, and scrolling in on the charts will display more granular data. Hovering the mouse over the now zoom-in graph will display the sensor reading at that time.
I recommend reviewing the Streams Highlight - Stream Charts Explained forum post that explains how to interact with these. Please keep in mind that since that forum post was created, there have been several updates to the Connections and Streams feature as we know them today.
