Is it possible to extract the numeric data from the results of a thermal simulation to plot graphs in order to analyse the results more effectively?

Yes.

What would you like to do that is not covered by one of these Help topics?

I want to select specific nodes on the simulation and create a graph of temperature against time. Having read those pages you have supplied, they do not match up with my layout of fusion. It instructs me to use the results command however I do not have access to the same options that they do. I have attached a photo to try and help you better understand my predicament. Thanks for the help again.

Since you are using Fusion, you should post your message to the Fusion forum instead of the Simulation Mechanical forum. Simulation Mechanical is a different program.

But Fusion only performs steady state heat transfer analysis, correct? If you want temperature versus time, you need to perform a transient analysis. Inventor Nastran and Simulation Mechanical  will perform a transient heat transfer analysis.
