Is there a way to have the walls turn back on itself when curtain walls are added like doors do?

Are you talking about Wrap at Insert?  That's a Basic Wall thing. 

...what are you doing exactly? Embedding Curtain Walls into Basic Walls?

Cut the wall with an opening family then place the curtain wall in the hole.
