No. You can only enter elevation delta value when edit sub elements. To get the 1/4" per foot slope, you would need to do some math; or create a temporary separate sloped roof with a 1/4" per foot slope as a reference to match the sub elements of the original roof; or use one flat structural floor and one sloped insulation roof and join them.
