Just place new Spot elevations for the new floors.

You don't actually say what the problem with your roof is.  We don't know what its supposed to look like.  Perhaps the view is set to Wireframe, if that is what you are referring to.

It looks as if your view range isn't high enough to see the plan.  Set it to be higher.

Do you understand that Annotations (e.g. Spot Elevations, Tags, Text) are VIEW-SPECIFIC ELEMENTS?

View-specific elements display only in the views in which they are placed.

It's not clear what you're asking.  Your roof doesn't display properly because the view range is not high enough to see the whole roof.  Barthbradley shows in his post how to adjust the View range so that you can see the whole roof.  Look for View Range in the View properties.

Are you asking about copying your spot elevations - as mentioned, these are view specific.  Create new ones to show on different elements.

Or are you asking about the Spot Elevation head?  If so what are you asking?  Note that the Elevation Head has nothing to do with the View Range.
