you can use insert > link IFC to your revit project file.
What I mean is that this mass object is not by default a shading, so Revit would not assign IfcShadingDevice to it by default. For example, as a contrast to this case, when you create a wall, Revit is intelligent enough to assign an IfcWall to it.
My question is, how can I assign any desired Ifc to a mass object?

yes, in the options you can type anything you like. You mentioned ifcShading, so I typed that, I didn't check if its a valid ifc entry

you have to define the subcategory before you can apply it.
To make a subcategory - [Manage][Object Styles] select the category (Mass or Generic Models) and make a new Subcategory.

I tried to delete the subcategory that I created, and it was deleted in the "Object Styles". However it still exists in the list of subcategories in the the IFC Options! Is there any solution to remove it altogether from the IFC Options as well?

There is no solution using Revit. But the IFC-options file is a text-file, perfectly readable. So find the file and delete the line where the subcategory is defined.
I haven't tried it, so make a backup copy first in case of disaster
