Rotating Patterns

I can rotate a model hatch pattern by selecting it in a view and rotating. 

How can I rotate a model hatch pattern itself? 

This way I don't have to rotate all it's instances in the project? 

I thought I could select all hatches as a workaround, but that doesn't seem to be the case. 

Come to think of it, is there a way of selecting all hatches?

If it was created within Revit you can edit the fill pattern type.  If it is a custom pattern you have to modify the information in the revit.pat file.

Are you wanting a different hatch or a different orientation to host? If you change the material's hatch pattern to Drafting, you might be able to achieve what you're looking for by changing its "Orientation in Host Layers".
