Does anyone know if it's possible to remove a Sheet from an Assembly (not delete it), so that it appears in the Project Browser under Sheets rather than being hidden away under Assemblies?

No, not possible. You can create a sheet under the Sheets tab or under the Assembly tab. But you can not move between them. So yo would have to recreate them.
