Does anyone have any experience running Revit 2017 or 2018 on Nvidia's Quadro P600 vs P1000 graphic cards?
They're both supported on the Recommended Certified Hardware List.
Since the P600 costs half the price of the P1000, I'm just wondering if the performance of the P1000 is 2x that of the P600.

The Quadro line is a scam, get Geforce cards. To compare performance, look at the pixel fill rate.
Geforce cards are nor certified by Autodesk but that's because Autodesk and NVIDIA are trying to get you to pay more for absolutely nothing.

We have 20 x Geforce 1060 Ti 6GB with no problems.
NVIDIA is in a relationship where they pay autodesk to certify the cards. NVIDIA has no interest in showing that it's cheaper cards are vertified by Autodesk, so they will not pay. If you think that NVIDIA is open to receiving feedback from it's customers, you are wrong! There is no way to realistically contact NVIDIA so that they can end their profitable industry scam.
Sasha has already pointed out that NVIDIA is the one that would need to send the list and they never did.
But, why would they stop? People are paying more for less,so that fits their financial intents.
If you have a proper way to contact NVIDIA, I certainly will But I ma confident that this is intentional and that nothing will be done post contact. This is not a coincidence, it is a business decision from the top to get Revit users confused about proper reliable Revit hardware. Even worse is that this tactic is working and Autodesk is silent on the issue, since it only affect their customers and not Autodesk.

I posted in the NVIDIA forum. As expected, there was no response from NVIDIA.
When will Autodesk be honest with its customers and tell them they can use GeForce cards? Right now the dishonesty is hurting the industry and is HIGHLY misleading. NVIDIA is executing a giant scam on architects and Autodesk is fully complicit.
Because of Autodesk's actions, firms are buying expensive and weak graphic cards. Autodesk needs to certify GeForce cards.
Is there a back door agreement whereas NVIDIA pays Autodesk to not certify GeForcce cards so that architects and engineers will think it is necessary to buy Quadro cards? Basically, this looks like a cartel/unethical move from both companies, where the consumer and the industry is the ultimate loser.
Sasha's answer is a non-answer that is meant to dismiss this concern and turn a blind eye.

We all know this is futile from a customer's point of view, as seen in the forum post above.

If I see the warning disappear and the certified hardware disappear with only a focus on the system requirement, then I will see a willingness to fix the scam/issue.
If I see certification that includes GeForce hardware, then I will know things have been fully resolved. In the meantime, I have no other option but to see this as turning a blind eye in bad faith. What is written between the lines is far too obvious to be ignored: NVIDIA and Autodesk are purposely misleading customers for money by telling them to buy Quadro cards instead of GeForece cards.
