Is it possible to modify a selected portion of a certain wall/floor/roof to a diff. finish

without creating a new system?

Examples:

A) change finish of bathrooms to tile on a typical wood floor/wood finish floor

B) remove asphalt shingles from roof at any overlay dormer

Is it possible to do this or would you need to create a new floor/ new roof in the examples indicated?

This is almost a textbook example of what the Split Face and Paint tools are for on your Modify tab:

There are different approaches to doing this and we use all of them in every project. Regarding tile, I would suggest doing it as a separate wall assembly placed over your partition walls.  Regarding your "Dormer" condition; I don't understand, but here, we always model the shingle layer as a separate roof assembly.
