You have to delve down into the Family and see what Tags are used inside - as originally stated there are some already set up.
Select the Elevation Tag/Marker - At the End of the Elevation Tag line that reads 12mm circle click in it as 3 dots ... appear at the end - Click on this to see what is associated to this Elevation Tag

From here we can identify that this is the Family used in the Tag - From here you can select other Types of this Tag (Text arrangements and visibilities etc.) This is what the original solution recommended so a solution could be a couple of clicks away - try them all first to see what works for you!!

You can find this family in - Project Browser > Families > Annotation Symbols

If you still need to edit the Family and adjust or add in visibly Parameter's - Select in Family Tree > Right Click > Edit

In the Family, select what item you need to control - Then select Edit Type from the Properties Palette and you can see for Each Type the Visibility Parameters change to control what will be seen when each Type is used.

You do not want to override the existing so save it and reload back into the model as a new reference/family
