I want to cut two holes in my revit kitchen countertop

I wouldn't really recommend modeling that, instead just document it with detail lines, but if you do want to model it you will need to edit the countertop family

If you do choose to model it, it is also possible to create a face based void to cut the hole.

Host a face based void family on the countertop and copy it. In the project.
