How to make proper walls with varying thickness and shape? (old building)

Hello.

I am working on a model of an old building (approximately 1800s), and I need to create walls which would have varying thickness and shape (see screenshot).
Person working previously on this model was able to do this, but I don't know how.
I can't make-in-place component because than I won't be able to assign the internal (structural) material and wrapping material, I need the wall to be a proper wall.

How can I design such walls?

Any suggestions would be appreciated, thank you.

If you are able to use the previous persons model can you investigate this walls type?  Can it be copied and pasted and edited?  

I would possibly suggest that the Structural components (Mass Shape) was created using a In-Place Components and the wall finish (wrapping material) is a Wall Type with just plasterboard as its buildup and traced around the edges of the In-place Wall Component

 

You would need to create such elements using Model In-Place Component/Families and create blends, sweeps and extrusions to match the irregular shapes and set them to the Wall Category.

There is a taper and slope function in the standard wall tool but even so those may be beyond the scope of its capabilities.

Do you know the assembly within the existing wall? I would have a regular wall wrap around the odd shape and infill the inside with in-place family or leave it empty.
