An In-Place Model Void Sweep and Cut Geometry would do it.
...but is the core top sloped, or is the mortar bed for the cap sloped?
...I might do the mortar bed as a variable thickness floor and shape edit the bed. Or not model it at all and just use a "typical" cross-section detail to call out the construction specifics.
