Under the properties of one of my tables that I placed the "Elevation from Level" is greyed out in the constraints, and set a few feet below the desired level in elevation. Any ideas on how to resolve this issue?

...sounds like you want a Work Planed Based Family. If so, check Work Plane-Based checkbox in Family.
