How can you have an instance yes/no visibility parameter for "Sim" reference label on callouts? Tried adding the yes/no visibility parameter to the callout family (similar to stamp on off in a sheet: https://knowledge.autodesk.com/support/revit-products/troubleshooting/caas/sfdcarticles/sfdcarticles...), but cannot figure out where to check/uncheck it for each callout instance - it does not appear in the properties of the callout.

No.  The default "Sim" is a type property and only shows when the call-out references another view.

Just create another type and delete the SIM. on the new type.

From what I understand, if you change the type properties, it will change all of the callout heads across the entire project. And there isn't a way to select a different type for each instance. If you know differently, please post screen shots explaining how to do it.

No. You can have different Call-out (view) types in a project.  Call-out type A uses call-out head symbol type A.  Call-out type B uses Call-out head symbol type B.  And so forth.  The thing is one view can only have one call-out type.  So you cannot show a true Call-out of a view and the referenced Call-outs of the same view using different symbols.  Clear as mud?

I think I get it. One enlarged plan can only have one callout head type (both the original callout or any "reference other view" callout have to be the same).

That's a bad idea. You would have multiple section/details bubbles for TYP, SIM, O.H. Description notes, etc...
