Is it possible to get the percentage of empty text fields count of some choosen familes and categories by field

Not sure if I get you right but considering that in Revit you cannot use Text parameters in formulas, I would assume NO it is not possible
However, in Dynamo You can get values of text field and calculate percentages using stings and Boolean mask trues / False
