How can I change the colour of a structural slab from the default grey to a lighter colour?

I have tried "override graphics in view", but it does not change.

Edit the Slab Type. Go into the material. Uncheck Use Render Appearance. Below that checkbox, there is a color swatch. Change it to whatever you want.

I don't see that option when I Edit Type:

Look back at your screenshot. Click on the long skinny Edit button next to Structure. Then click on the material name. That will take you to the Material Editor where you will see the option my previous post.
