Use a Multiline Text Parameter

Open up an existing Room Tag, replace the existing Label's Parameter with a Shared Parameter of the Type "Multiline Text".  Save the Tag Family under new name and load it into the Project.  Now create a new Project Parameter, using the same Shared Parameter you put in the Tag Family, and assign it to Rooms.  Afterwards, edit your Rooms and input the Multiline Text you want into the new parameter field you just created through Project Parameters.  Tag the Room with the new Tag and...voila!...it reads that Multiline Text.

A bit of a long process but I've managed to do it, Thanks!

Yes.

If the parameter is Single-line Text parameter then you can set the width of the label to wrap it.  Most of the built-in Identity parameters are single-line, unfortunately.

Or create a new Multi-line Text shared parameter and use it for the label.

As cool as Multi-Line Text type is, you may end up hating it because it is cumbersome to edit through properties all the time.

I assume you want the option of having either a narrow tag, or a long single line tag, and not just one or the other universally?

Another option might be to create a second Room Tag type: (select a room tag, open "Edit Family" under the "Modify/Room Tags" tab, adjust the width of the text field, and save it under a revised name (e.g. "Room Tag- Short") to your family folder.)  You can then pick either type of room tag you want to use for your application (original or the modified "short" version which forces line breaks) under the Properties without universally modifying all of your tags.

Hope that helps.
