I'm creating a curtain wall with only horizontal mullions.
I would like the ends to be angled without using a corner/end mullion.
Is there any way to achieve this without having to hide the end/corner mullion in all views?

Why don't you just hide the angled mullions in the views? Pretty much what we do with any "reference" element, such as a Mass Form that hosts Walls or Roofs by Mass Faces.
....maybe even create a View Filter Filter to automate the process of hiding the "Reference" Mullions in the Views.
