I tried different approaches from this forum but I cannot solve this:
I cannot get a map based color on my interactive groom description even if I can see it in the viewport.
Any "must have" workflows?

When using a ram as a texture you should follow this workflow here:
XGen - Arnold for Maya User Guide - Arnold Renderer
It's at the bottom of the page. On the ramp make sure to check Implicit UVs. I've never done this personally
If you wanna use a texture map you should follow the procedure found here:
Assigning Color to Splines - Arnold for Maya User Guide - Arnold Renderer
It's been a while since I've used Xgen, but I haven't had an issue yet. Maybe up your scene file if you have already tried these out?

Last time I found tha page you shared I quit reading it because of the deprecated "aiHair" and root/tip parameters.
But unchecking "All Curve Implicit UVs" worked fine!
