As per above screen shot I think I narrowed it down to either Macintosh HD or Data but I am still not sure even after reading this: https://www.macintosh-data-recovery.com/blog/difference-between-macintosh-hd-and-macintosh-hd-data/

I can't find anything in the documentation, neither can I find anything via Google or Youtube, it is like this don't exist for anyone else? Please help?

My understanding is that the "Macintosh HD - data" volume is where your files and your installed apps should go. The other is for System (macOS) applications and files only (and is read-only). So, install on the "data" one. I'm not sure why the option is even presented during install time.
