Hi There,
I set my project all the time before start any project.
But lately I come up with a big problem.... all the time I import something into maya and after a little bit save the scene.... maya save it on the folder where I imported that geo from... wherever that place is.
So, if I import something from the folder Data maya saves the scene in Data folder after that and ignore the Scene folder, even if the project is set correctly...
Could I have some help on this please...

Hi @Anonymous and welcome to the community!
This due to a change with file path set ups that came to Maya in 2017. Now importing, opening, saving etc will open to the last location you were at.
To avoid this, when you go to save your scene file, simply click the scenes folder on the right side of the window and that will put you in the right directory.

As Sean has informed you, Autodesk has made changes to the save feature and many users are unhappy with that, we encourage you to voice your opinion on the Maya Idea forum and place your vote so perhaps this feature is reversed back prior to 2017.
