Attempting to install Inventor Professional 2019 as a licence type of:
Education Multi - seat stand alone
After sofwrae has downloaded and installed, i reach a 'configure' screen with 2 x requird fields of:
Administration Image - Deployment Configuration Name
and
Administrative Image Path
Can anyone help me as to what needs to be populated here?

You are familiar with what a deployment is right?
Not sure if you just wanted to install on one machine or not.. (just checking as if you are just installing on one machine you don't need to do any of this..)..
The deployment name is just a name you give to it.. Pick whatever... "Autodesk Inventor 2019 deployment"
The path is where you want that deployment to be saved so it can be accessed by all the other computers..

Welcome to the Autodesk User's Community..
May I ask how many seats are you installing at your school? With standalone educational license you will need to manually activate each seat separately which is a lot of work when it comes to large qty of installations. I would actual recommend that you go the network version where you can use the network license to activate all your copies upon launch.
