I cannot really help with that other than suggesting the usual in that order:
1. Close and restart Fusion. If that does not work
2. Close Fusion and root the computer. If that does not work.
3. Uninstall Fusion and re-install it.

No. These three view modes are available when editing a T-Spine only. They can be accessed from the menu:

Or when editing the T-Spline they are also accessible form the edit form menu panel:

They also have keyboard shortcuts:
When you click "Finish form", if the T-Spline does not enclose a volume watertight, then it will convert into a NURBS surface, otherwise it'll convert into BRep (solid body) containing NURBS surfaces.

Yep. Just select an edge, or double click on an edge select a whole edge loop and hit the delete key.
