There are 2 main issues that I am having with this part.
The first issue is that when off-setting the stock from the model, it thinks the back is the front when the origin is clearly on the front.
The second issue, which is more important to me is the spun profile is creating 1 part that stops at the first hole or 2 parts with the first hole separating them.

Firstly, it looks like the offset stock feature is working as intended. Offset from front means that the stock will be offset into the part (negative z-direction for WCS), which seems to be what is happening in your design.
When you say "the spun profile is creating one part that stops at the first hole or 2 parts with the first hole separating them," do you mean that you are receiving an error stating that the "...Turning profile is split into two or more closed parts..."? This is occurring because the through holes go all the way through the XZ plane in your machining setup. One way to avoid this error and generate the profiling toolpath is to use sketch lines and open contours. I have illustrated this in the screencast below:
I have to disagree, the split body is a marked failure of the Spun Profile as anyone should expect it to work. But there's a repeatable workaround:
I am 99% certain the X axis is used to split the part into a sketch profile to create/revolve the Spun Profile geometry, so if you select an edge or point through which there is no interruption, it should work. I haven't tried this with a sketch line but I'm betting it would work as well.
Using sketches to create simple 2D toolpaths is evidence of needed improvement and fixes IMO. I would agree that in some cases it is warranted but @Anonymous's part should work out of the box.

Agreed, I was thinking the same when creating the screencast but am stuck in my ways of leveraging the CAD portion of Fusion 360 for CAM toolpath generation. It looks like you are correct - interruptions on the XZ plane do seem to be creating errors with spun profiles! I went ahead and logged a ticket with our development team about this (CAM-5940), as this inconsistency is ignores the whole purpose of Spun Profile. They will be working to resolve this issue.

I've noticed this a few times but I believe this was the first time I actually sat and thought about it for a few minutes, especially after catching the failure of the partial interruption.
I love that I can leverage the CAD portion of Fusion for the CAM (I do the same thing in HSMWorks/SolidWorks for toolpath boundaries) but after using other standalone CAM systems I developed a massive aversion to creating geometry when it can be avoided. I admittedly take more time seeking solid repeatable geometry selections than sketching things, especially useful if the designer changes the part and deletes all the reference sketches (AMHIK)!

My only grip is the wording for the offset. Other than that, this answers all of my questions.

@thekondrat Do you have the new spun profile feature flag enabled in the preview dialog? I can get the spun profile to generate when this flag is turned off and I turn on spun profile in the setup.
