Should we not be able to offset from a line that's already been offset? Instead of having to continuously offset from the original line?
Quite frustrating...

I don't know about "should", but no, we've never been able to. (unless you delete the offset constraint first)

You can offset from an offset if you project the offset line to a new sketch first. While I know this is painful and extra
work, it does allow you to update the original line and offset without breaking the rest of the model. It is a workflow
along the lines of using simple sketches to incrementally create your model.

Hi! Another workflow to consider is to extrude the source sketch as a surface. Then create offset surface and project the offset surface edges to a new sketch. In this way, you will not be bog down by the continuous loop.

Generally, that will also result in a more robust model as surfaces have a clear direction (surface normal) and are not likely to "flip", which isn't unheard of in sketches 😉
