Creating chamfers/fillets on part of an edge

I'm a total newbie when it comes to any kind of CAD, so this is probably a pretty stupid question.

For shapes like guitar bodies with lots of bevels, soft edges and curves, how can I vary the depth of a chamfer along an edge? Also more importantly, how can I chamfer/bevel partially along an edge rather than the full circumference of the body?

Here's an Illustrator mockup of the kind of thing I want to achieve

 

Any advice is appreciated!

I would model the "chamfers" first, and then the fillets second.  I put the "chamfer" in quotes, because you don't really want to use the Chamfer feature to do this.  Personally, I would use a Sculpt/Form feature to create a surface, and use Split Body to do that cut.  There are other ways, including Loft, maybe Sweep, of doing those cuts.
