Are there any clever ways to create a "legend" so that I can quickly see which color will print to its respective thickness and screening besides just making a bunch of lines with the colors associated (i.e. manually)?

The easiest legend that you can create for yourself would be to set all the layers to have their lineweight set by the color. I've taken this one step further and my CTB is set to by object and the layer controls the lineweight but also lets me adjust the weight of objects without changing the layer.
