my first guess woutd be - are you using multiple lable styles for the pipes? if so check the layers each style uses. you may just need to modify the styles.
and i would guess the same for the surfaces - changes from "Existing contours" to "1 and 5 Foot" or something similar.
keep an eye here in the forums - there is a whole lot of information on multiple subjects.
and try to remain calm and think " i get paid by the hour . . . ." (YES, i know you still have to produce drawings)
