The current project is a simple 3d model of a roof. I have not spent a lot of time modeling and would like to know if there are some hard and fast rules for this subject matter. It seems superior working with solids as opposed to surfaces, so first I am drawing the walls as a polysolid. Could there be a way to have my wall outline define the outer edge of a polysolid rather than offseting the width to either side? See video attached.

If you want just a solid mass then you can use the Extrude command and select the 2d Pline and give it a height

Help is your friend.  Read up on the details of the POLYSOLID command, especially the Justify option in it.
