Do all of the Doors you place have a 10% opening? Without seeing how you place doors (from tool palette tools?) or what the settings on that method are, anything I say will be a guess, based on the out-of-the-box settings.
Door opening percentage can be overridden in the Display Properties (at the Drawing Default, Door Style and Door Object levels), but the US Imperial content for the Plan Display Representation for Doors typically does not do so. (Some specialty Door Styles may be exceptions.) Door Tools on a tool palette can also set an opening percentage/swing angle value; if done, that will be the value you will see in the Properties palette after placement. Most out-of-the-box US Imperial tools do not specify a value for this. A Display Property value takes precedence over the Properties palette value.
If neither your Display Settings nor your tool palette tool imposes an opening percentage or swing angle, then you will get whatever the current default is. To reset the default, start the DOORADD command (by typing it or choosing a Door tool that does not have a set value) and, BEFORE placing the Door, go to the Properties palette and enter a value for Opening percentage or Swing angle. Then place the Door. That entered value will be the new default value, until you repeat that action and enter a different value. Selecting a Door that has already been placed and changing its value will not reset the default value. Using a Door tool that has a set value will not reset the default value.
The initial default value has, in my experience, always been 50%/90 degrees. If you are getting 10%/18 degrees, then either that is your current default value -OR- you are using a tool palette tool that has that value set. It cannot be a style-level Display Override, or changes you make to the value on the Properties palette after placement would have no effect.
