In my current drawing I am dimensioning in model space. I use different dimstyles for different scaling.
The issue is this, I started out using one and now I am trying to switch and the dims will not change
they stay at the present size. (going from 3/4" = 1'-0" to 1-1/2" = 1'-0")

They "should" update to the size defined in the Dimstyle unless they've also have overrides. It may be helpful if you can upload a sample drawing containing a few different dimensions using different dimstyles.
As a side note, you might want to look into Annotative dimensions if you haven't done so already... it completely eliminates the need for multiple dimstyles (and layers) that correspond to different scales.

When you say they will not change do you mean when you try to change them in the Annotation pull down on the ribbon, they revert back to the 3/4 style? Or do you mean when you try to change them to 1-1/2" scale from the Annotative scale fly-out, they don't change? Or do you mean that since you changed style, the current dims didn't update to the new style?
The DIMSTYLE is changing. You may have not noticed since you went from 3/4 (16) to 1 1/2 (18). The text height is what is not changing. You have STANDARD text style set to 1.5". In the dimstyle manager click on the "..." at the end of the STANDARD text and change the height to 0. This will ensure your text is appropriate to your DIMSCALE text height.
BTW. You will have to set your text height in Dimstyle Manager to .125" to correct the current dimenstion text for that style.
