So the Nuts and washers you are showing in your picture come from the "Assembly" part of the bolt properties, Na2W is Nut and 2 Washers, that is why you have a washer under the head of the bolt and then a washer and a nut on the underside
It is possible within a standard to have different types of assemblies, so we can specify the number of washers and nuts etc
The quickest method would be to use a different Standard called "Set screw" thats the only one I can think of, off the top of my head without nuts and washers
All the anchors and bolts are based on those from Advance Steel, thats why @hmunsell you probably havent found anything on customising the families, becuase they are not Revit families.
It would be possible to add a new assembly to EN 14399-4 called "Setless or something"
To add new assemblies to the Advance Steel databases please see the Autodesk Video below, you modify the bolts in the management settings. Once you have your new bolts you need to get them into Revit, all the Revit bolts and Anchors are taken from the Advance Steel databases which have been copied into the Revit folder Structure, so you need to copy the Advance Steel Database with the new anchors and paste it into the Revit folder structure. Please follow the steps below (Again please note i am working on UK builds so the fodler paths will be different)
1. Shut down Revit and Advance Steel
2. Go to the following folder - C:\ProgramData\Autodesk\Revit Steel Connections 2023\en-UK
3. Rename the AstorBase.mdf to AstorBaseOriginal.mdf (Always best to have a backup)
4. Delete the file AstorBase_Log.ldf
5. Go to the following folder C:\ProgramData\Autodesk\Advance Steel 2023\GBR\Steel\Data
6. Copy the file AstorBase.mdf and paste it into C:\ProgramData\Autodesk\Revit Steel Connections 2023\en-UK
7. When you reboot your Revit you will now have the Assembly type that you created in Advance Steel available inside your Revit bolts
