if you change one number and all the subcategories change, that is because the layer descriptor column are all set to the same layer. the subcategories need to be named differently so they export on different layers.
another thing to check is... if your are sure all the export layers are correct, it may be the Export Layer Options setting. you may have overrides applied in revit that are being not allowing the export table to set the elements correctly.
