I am trying to create a piping kit with different sizes using CAD block already made for each size.  Is there a way to do this or do I need to create a separate family for each size?

DON'T go down that road. Introduce yourself to Revit properly through some training and/or self study as there's no need for this kind of workflow.

These are already created by the manufacture and would take me a while just to recreate them..  Trying to save some time.

Write each block to a DWG. Import each DWG to a family. Nest those families in one family, place only one and give it a label (family type parameter) to create a drop-down list of nested components to choose from.

What do you mean by a "piping kit"?
