The outline of toposurfaces are visible but the internal surface is not i.e. the 'fill' colour or pattern. Is it possible to make these visible?

Are you referring to the Poche seen in Elevation View?
Or, are you wanting are you wanting the surface triangulated via Triangulation Edges (subcategory of Topography)?

Which version of Revit are you using?
Did you check your visibility graphics if there is an override applied to the interior surface?
Ddo you have any filled regions? Are you using line work for the boundary?
Can you post a screenshot and a file to test further?
