@Anonymous hello, usually what we do, we created stair in revit as per normal and draw the nosing detail in autocad and link into revit project file specially when er are rushing for tender. see attached.

2nd option is to create a new family profile of your nosing and load into your project file. you can it <<click HERE>>  similar  tutorial. thanks

Create monolithic stair, use linework / 2D detail family to add nosing information to the sections and details.

Do you really need to include all of those details in the model?  In my projects, stair plans cover XY dimensions and relationship with other building components.  Sections cover Z dimensions and relationships.  Things like nosing, fillet, stripe, etc... would be covered in enlarged details.
