hello there, i just finished a project in Revit, the client is asking me for the Revit model, is there anyway to remove the Revit project template in order to avoid the client or someone else stole my Revit project template?

What template?  You project model includes the model, families, project standards, views and sheets.  Which ones do you not want them to have?

my view styles, my families, my graphics overrides, my filters, my dimensions styles, all the styles related, my configuration, everything, I don't know if there is a way to hide or erase all these things and let a clean the model, where my client only can access to the model to extract quantities information

Export the model to IFC or NWC then, assume that your client know what to do with those files.  What does your contract say?

the client ask us to design the model, structure, and mep, but he is asking someone else for a budget, so he ask us for the model in order to make easier the extraction of quantities information
