That screenshot of one frame of a video is showing how to manipulate the points of an already created surface. Have you a surface yet? I think not. You need to create one first. Use the method I described above to create it. Once the surface is created, then you can manipulate the points to shape it however you want.
You know, there a butt-load of videos out there showing how to do it.
