How can I add color and hatching in the family parameters for this element. Thanks for the help!

Why don't you just do that in the Project via Graphic Overrides?

It is about a table that I would like to automate with standard values and I would also like to be able to change the colors and hatching with them at once. That's what I want to achieve. But I can't find how I can do this.

Table?  Can you tell us what this Family is and how it is to be used in Revit?

Create different types in the family, each has a filled region type with a different color. Furthermore, you can nest that family in another family and use a family type parameter to create a drop down list.
