What Version of Revit is that?
It looks like you have a Project Parameter (not Global Parameter) named "Category" and you want to rename it. If so, edit the Project Parameter.

That's right, I created the 'Category' but I want to rename/delete the name of the categories. As you can see from my screenshot, it says 'Option 1' - that's what I want to rename/delete. Do you know how I can go about it?
Create a schedule > go to Sorting / Grouping tab > sort by Category, untick Itemize every instance box > then change Option 1 value in cell.
Sounds like you want to rename the actual Options. That's done by editing and renaming the Design Option.
I've updated my Options already to include 'A' and 'B' now, see below:
Now I want to be able to delete/rename the below highlighted list to reflect my new Options:
I can add the newly titled options by simply typing in the field - 'Option 1 - A' etc... but I can't find a way to access the list and edit it.
Out of curiosity, what is the purpose of including this Project Parameter in View Properties?
Great! Thank you! I've managed to access the list as per your instructions. I can see how to delete each cell but not edit?? No biggie though.

No do not delete any row, if that is what you mean. Because that would delete actual views in the model.
You can click in a cell and edit the text. If you cannot do that, it usually some views have a template assigned to them. In such case, you would need to edit the view template.

I can't edit the cell in the schedule. I do use View Templates but can't figure out how to edit the Category Title, eg. 'Option 1' into 'Option 1 - A'.
I also tried to delete a cell with all of it's views but it didn't delete the title from the Category list.

Just highlight all the views in the browser with Option 1 and change to Option 1A.
