By creating view filters which filter the grid type for example or you could add any project parameter you need to the grids category. Having several grid lines with the same name is (of course) not possible and can be confusing if you do. However there are a few workarounds, such as linking for example if you're dealing with an existing adjoining building ie. But you could also just name them differently (A / A-0 / Agf / ..)...
edit: Think I misinterpreted your last question. You can assign scope boxes for example that only intersect the first two levels, same with levels / other datums and those will only show if the level intersects it. Or simply drag the grid point below the intersecting level (below bottom view range).
