when i join this glu lam ridge beam to the roof it makes this weird triangle cap over it across the ridge of the roof.
no change in 3D

this only cuts the beam with the roof
That is what Join Geometry does...Cut Beam with the Roof or Roof with the beam...What would you like to do? You have a sketch or section?
